hes using the sponge to get a nice texture on the outside and do apply water to the outside of the pot so it doesnt grab and ruin the pot.
I live in Spokane as well and I know U-Hi has a pottery class that is split into Intro and Advanced, advanced students use the wheel. Hope this helped.
